Mother Sauces and Emulisifiers - Balsamic Vinaigrette



Vinaigrette                                   Prep Time: 5 minutes                     Yield: 2/3 cup
INGREDIENTS
2 tablespoons vinegar
1 teaspoon salt
1/2 teaspoon black pepper
6 to 8 tablespoons olive or vegetable oil
Just a squeeze of Lemon Juice

DIRECTIONS
Use a fork to mix together the vinegar, salt, pepper and any additional seasoning. Gradually beat or whisk in the oil. Taste, add the lemon juice and adjust the seasoning. Serve immediately.

Store unused vinaigrette in a glass jar in the fridge. Shake or whisk well before using.

Low Down:

Tart and Healthy!! A nice alternative to all those heavier dressing. Light flavor and taste.
