Balsamic Roasted Vegetables






Balsamic Roasted Veg.        Prep Time: 10 minutes   Cook Time: 25 minutes   Yield: 3 servings
INGREDIENTS
2 cups cubed red potatoes, unpeeled
1 cups baby carrots
1/2 large red onion, sliced into 1/4-wide strips
1 tablespoons balsamic vinegar
2 teaspoons olive oil
1 clove garlic, crushed and finely chopped
½ teaspoon dried thyme
½ teaspoon dried crushed rosemary
½ teaspoon rubbed sage
3/4 teaspoon salt
1/2 teaspoon ground black pepper

DIRECTIONS
·         Heat the oven to 425F.
·         Toss the prepared potatoes, carrots, and onions with the balsamic vinegar, olive oil, garlic, and herbs.
·         Arrange the vegetables in a lightly oiled, large roasting pan. Roast the prepared vegetables for 35 minutes, stirring every 10 minutes.
·         Season them with salt and pepper before serving.

Low Down: They are a little on the dry side so make sure to have some type of dip or sauce, but the taste is superb.
