Almond Ricotta

Almond Ricotta (Blanched)           

Prep Time: 15 minutes   Cook Time: N/A   Yield: 2-4 oz.

INGREDIENTS
2 cups almonds (blanched)
¾ cup water
½ teaspoon salt

DIRECTIONS
·         Place almonds, salt, and water in blender.
·         Blend until smooth but still has grainy appearance.
·         Pour mixture into the cheesecloth lined strainer allowing the liquid to drain (approximately 2 minutes).
·         Gather and tie the edges of the cheesecloth together forming a sack.
·         Allow the sack to remain in the strainer, and place a large can or heavy item on top to help press out the remaining liquid.
·         During the pressing process, place the cheese in the refrigerator for 30 minutes.
·         After chilling for 30 minutes, unwrap and serve. 

Low Down: It's not for everyone. The texture is odd, but make sure you really crunch the almonds for a smooth texture.
